Green Onions is the debut album by Booker T. & the . s, released on Stax Records in October 1962. It reached number 33 on the pop album chart in the month of its release. The title single had been a hit worldwide and was covered by dozens of artists, including the Blues Brothers and Roy Buchanan (both with Steve Cropper on guitars), as well as The Ventures, Al Kooper, The Shadows, Mongo Santamaría and Count Basie.

Green Onions" is an instrumental R&B hit recorded in 1962 by Booker T. The tune is a 12-bar blues with a rippling Hammond organ line. The guitarist Steve Cropper used aFender Telecaster on "Green Onions" as he did on all of The . Originally the song issued on the Volt 102 subsidiary of Stax Records in May 1962 as the B-side to "Behave Yourself", it was quickly reissued as the A-side of Stax 127; it also appeared on the album Green Onions.
